Red Velvet Brownies
Preheat oven to 350*
Line 1 9x13 pan with parchment paper
Baking time 25-30 mins
- 1 cup melted butter
- 2 cups sugar
- 1/3 cup cocoa powder
- 4 eggs
- 2 teaspoons vanilla
- 1 1/2 cups all purpose flour
- 1/2 teaspoon salt
- 1/2 cup chocolate chips, chopped
- 1-2 teaspoons gel red food coloring
- While butter melts in the microwave, whisk together sugar and cocoa powder
- Mix in melted butter, make sure it is not hot
- Whisk in room temperature eggs just until incorporated
- Sift flour and salt into mixture and fold in until smooth
- stir in chocolate chips and food coloring
- Pour 3/4 of batter into prepared baking pan, saving 1/4 to swirl in a bit
Cream-cheese Swirl
- 1 8 oz. package cream cheese
- 1/2 cup sugar
- 1 egg
- 1/2 teaspoon vanilla
- soften cream cheese in microwave if needed
- beat with sugar until really smooth
- add room temperature egg and vanilla until smooth
- pour over red batter in pan
- drop spoonfuls of remaining brownie batter over cream cheese filling
- swirl around with a butter knife
- bake until set, slight jiggle, try not to over bake, no browning
