Red Velvet Brownies






Preheat oven to 350*
Line 1 9x13 pan with parchment paper
Baking time 25-30 mins 

  • 1 cup melted butter
  • 2 cups sugar
  • 1/3 cup cocoa powder
  • 4 eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups all purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips, chopped 
  • 1-2 teaspoons gel red food coloring

  1. While butter melts in the microwave, whisk together sugar and cocoa powder 
  2. Mix in melted butter, make sure it is not hot
  3. Whisk in room temperature eggs just until incorporated
  4. Sift flour and salt into mixture and fold in until smooth
  5. stir in chocolate chips and food coloring 
  6. Pour 3/4 of batter into prepared baking pan, saving 1/4 to swirl in a bit

Cream-cheese Swirl
  • 1 8 oz. package cream cheese
  • 1/2 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  1. soften cream cheese in microwave if needed
  2. beat with sugar until really smooth
  3. add room temperature egg and vanilla until smooth
  4. pour over red batter in pan
  5. drop spoonfuls of remaining brownie batter over cream cheese filling
  6. swirl around with a butter knife
  7. bake until set, slight jiggle, try not to over bake, no browning
