Lucky Charms Pie


We are back in the world of Jell-O!  I am skeptical every time we try a recipe with Jell-O as the main ingredient.   Despite my skepticism, Jell-O has always come out on top and this St.  Patrick's Day pie is no exception. 



The Pillsbury Busy Lady Bake-Off cook book is full of recipes from the 17th annual bake-off edition of 1966. There are "100 prizewinning recipes shortcutted and up-to-dated" to accommodate us busy ladies. This way way we can cut down on prep time but not to give up flavor or quality. There are no cheat ingredients, like crescent rolls or canned biscuits. Everything is made from scratch so you can make a real homemade dessert.




While flipping through this Pillsbury recipe book, one dessert stood out among the rest, Imagination Pie! That name alone hooked me in right away. It sounded like the perfect dessert to feature in our St. Patrick's Day video. Imagination = Rainbows = Lucky Charms = Leprechaun = St. Patty's Day.  



I did do some tweaking to the original recipe in order to make what I imagined a reality. The original recipe uses lemon gelatin mixed with Pineapple frosting but I thought lime gelatin would give the right festive color. I also used a can of Pillsbury fluffy frosting to help mimic the Lucky Charms marshmallows.  


Let your Imagination run wild with this dessert.  The combinatons are endless and this one was a major success.  Who knew lime was the hidden ingredient in Lucky Charms? I dub this Imagination Pie to be Lucky Charms Pie forever more. It was so yummy that Sullivan and I not only ate some for the video, but continued to eat more after filming. It was my lunch!
