As a pastry chef I have always been on the hunt for the perfect chocolate chip cookie. I have tried tons of different recipes but something always seems to be missing. In my trials so far I have determined the winning cookie needs: more brown sugar than white, egg yolks in addition to whole eggs, and kosher salt. With knowing all this, choosing new recipes has become much easier.
Today I feel like I got very close to achieving my chocolatey goal. The secret to a delicious cookie is browned butter. This adds so much flavor to your cookie and brings it to a whole nother level. By browning the butter it brings out a nutty, toasted, caramel, toffee note that you can't get any other way. This is exactly what my recipe needs.
Something that I have never added to my cookies is yogurt! Why in the world is yogurt in a cookie recipe? Well, let met tell you it's not a bad idea. I had vanilla greek yogurt which I feel helps to boost up your vanilla extract. Win!
I am not sure that this is THE best cookie recipe but it is so0o0o close!

I baked off enough cookies to give my little family of 3 a snack and the added 1/4 c vanilla yogurt to make them into bars to share with friends at work. My family also loves peanut butter so I tossed in some peanut butter chips.

1 cup (16 tbsp.) unsalted butter
½ tsp. coarse sea salt, plus more sprinkling
1 cup light brown sugar
½ cup granulated sugar
1 large egg plus 1 egg yolk
2½ tsp. vanilla extract
2¼ cups all-purpose flour
1¼ tsp. baking soda
1 tbsp. greek yogurt or sour cream
1 cup semisweet chocolate chips
¾ cup dark chocolate chips
Bake 375 for 10-12 mins
In a large skillet, melt 3/4 of butter until foamy and brown flecks appear. Pour into large bowl with remaining butter, stir until melted, stir in brown sugar and white sugar. stir in egg and egg yolk until sugar mixture thickens. Stir in yogurt and vanilla extract.
In a separate bowl, whisk flour, baking soda and salt. Mix into butter mixture and then add chocolate chips. When everything is all mixed together, chill for 30 mins.
Scoop cookies onto parchment lined cookie sheet and bake for 10-12 mins. Let cool and enjoy!
