Lemon Meringue Pie


     I love a good excuse to bake and what better than the church potluck? Now that the weather has teased us with warm spring days, I have been itching to make a lemon meringue pie. I acquired a 1968 Betty Crocker Pie and Pastry cookbook. This book is made for a pie lover. It features sweet and savory, fruit and cream, everything you need to satisfy your little pie heart!




     Lemon Meringue has been a re-accurring joke within my family. My mom refuses to ever make it because of an unfortunate event in her past. Story goes, a freshly married Sue Massucci whips up a beautiful lemon meringue pie for her new husband, Angelo Massucci. Knowing that it is one of his favorite desserts, she is very excited as she places her creation before him. As he cuts in for a slice she is horrified to see that her curd did not set and it falls apart right there on his plate. Super bummer! SO, never again has my mom attempted this pie. They joke about this all the time, if its on the menu at a restaurant, you know Dads sayin, "Oh look, they have LEMON MERINGUE PIE!" :D

    It was up to me to redeem my mom and serve up a stand up pie! 




     I am so happy with how this pie turned out. The filling was super stable but silky smooth, tart but sweet and the meringue was light  with a toasted crunch! It got rave reviews from the church. I was told people were bummed to find they missed out on a slice. I made sure to snag a one for my dad before they were gone. He loved it! Mission accomplished! Angelo finally got his lemon meringue pie after 34 years! 





Bake it up for your sweetheart and I promise your marriage will be as stable as your pie ;D!
