Oh, the boxed cake mix...the pastry chef's #1 enemy. Somehow this pre-measured dust can guarantee an effortless, delicious, birthday worthy cake. It hurts my little chef heart to say that I have found an even better way to make that mysterious powder into something that can pass for homemade! Just add pudding!!
Two instants seem to make a right! For this recipe, Sullivan and I used Jiffy Chocolate muffin mix and Jell-O instant White Chocolate Pudding. The small Jiffy mix was just enough for 1/4 recipe for our tasting. All we had to do was dump both mixes into a bowl and add eggs, hot water, oil and sour cream. I had been dying to bake a cake in this copper cake pan I just found at the thrift shop. We covered every detail in butter and dusted it in cocoa powder.
After mixing our batter together, we poured it into our prepared pan and baked it for 25 minutes. When done, the cake popped right out of the pan and the smell of chocolate filled our entire house! We dusted powdered sugar all over to highlight the details made by the beautiful pan and dug in.
This simple cake was super moist and full of flavor. The Jell-O Pudding made a soft and luscious crumb that melted in your mouth. From box to fork took 35 minutes. I regret nothing!
