Granola Bars
Since forever, parents everywhere have been trying to sneak whole grains into their children's food. In the mid 90's Quaker Oats created a snack that has everything kids love and everything parents approve of. The Chewy granola bar is perfect in lunch boxes and as an after school snack. To this day my sister still packs one in her lunch for college.
With this Quaker Oats Wholegrain Cookbook from 1970, we baked our own version of this wholesome snack. By making them ourselves we were able to cut out all the extra nonsense that might be hiding in the originals. Sullivan and I used organic rolled oats, organic honey and mixed in all of our favorite nuts and dried fruit to make them extra yummy. Someone kept sampling the mix.....
This recipe is very quick and easy to make. All you have to do is pour everything into a big bowl and mix, mix, mix. Be sure to butter your baking dish for easy removal and cut them after baking. Done! You can make a large batch for the school week and change it up each time. I want to try cinnamon chips and dried apple slices next. YUM!
