After Susan's brownies proved to be a huge success, I was not surprised to find that the next two recipes I tried from Good Housekeeping's Book of Cookies were super delicious. It did take me a moment to find a recipe without nuts of some kind in it. For some reason, they seem to be all the rage...Walnut Nuggets, Walnut Party Puffs, Brazil-Nut Sticks. Even if it wasn't in the title, you best believe you could find it at the end of the recipe. Don't get me wrong, nuts have their place but I don't want them all the time.
For my Valentine's Day treats I chose to bake up Chocolate Coconut Macaroons and Cherry Drops. They are both very different cookies, in preparation and in taste but, when finished, look so good together. The Macaroons started with egg whites whipped to a stiff peak. I then cooked them over low heat with sugar and cocoa powder for five minutes. This made a thick and gooey paste that shimmered as I poured it over shaved coconut. As I stirred them together, Sullivan and I both couldn't stop sampling little flakes when they accidently flew out of the bowl. I scooped them by the tablespoonful onto a sheet tray and baked them for 20 minutes. Done!
For the Cherry Drops I had to improvise. The original recipe started with a cookie mix, which I never have in my house. I flipped back a couple of pages and adapted it to the Norwegian Sugar Cookie recipe. I pretended that was my "cookie mix" and then added the cherry drop ingredients to it. Someone could not stop snacking on the maraschino cherries!
Both of these cookies were delicious in their own way. The Chocolate Macaroons had a crunchy toasted coconut exterior with a sweet sticky center. The Cherry Drops were soft with a burst of cherry flavor. As always, I highly recommend you try them for yourself! I would never share if they were not worth it!
