Ice Cream Bars


In this house we go though jars of peanut butter like most families go though rolls of toilet paper. It is a necessity and just as important. More often than not, I end my nights digging into the jar, grabbing a big scoop, and licking it straight off a spoon. Some say it's a problem but I say its love.

Dan, my husband, has been keeping a strict diet for the past year and a half and has lost over 30 lbs. All week he eats low carb, high protein, fat, and veggie meals but when Friday comes around he lets loose. This is where I come in to play. He picks out desserts that he thinks we should try and we make them together. 

This past week he picked these Snickers Ice cream bars and I could not have supported this decision more. We decided to make them extra peanut buttery by making the ice cream peanut butter flavored because, why not? 

They are very easy to make and here is how we did it...

Peanut Butter Ice cream
1 1/2 c heavy cream 1 c milk 1/4 c sugar 1/8 teaspoon salt Bring to a boil stir together 5 egg yolks + 1/4 c sugar temper and put back on stove cook till it coats the back of a spoon or reached 140*
1/4 c creamy peanut butter

Once your custard is ready you need to cool it completely before pouring it into your ice cream maker. I you don't have an ice cream maker then place it in the freezer and whip it with a whisk every 30 minutes until set.

Now you can spread your fluffy churned ice cream into a parchment lined 9x9 pan and set it in the freezer until completely frozen.

Now you need to quickly smear peanut butter over top of your frozen ice cream, press in some peanuts and drizzle on some caramel.

Once everything is frozen together melt 4 cups or more of dark chocolate chips over a double boiler. You can now pull the bars out of the pan to cut, dip and place on parchment to firm up. DONE!

You will not regret trying these, I promise you. This batch barely lasted the weekend. Again, I'm in love.
