Jell-O Take #2

     After my tragic experience last week with the lime rice jello mold, I had told myself that I wasn't going to let myself be defeated but this gelatinous substance. I was going to try again and agin until I got it right. I apologize if you are already over this but as a professional pastry chef I can't let my downfall be Jell-O! 

     This weeks flavor is Cherry Cola made with real cherry Coke!  I found this recipe to be very intriguing because it not only had cherry coke as one of the ingredients but also contained cream cheese and mayo..... Why mayo?? Honestly even after trying this, I'm not completely sure. The flavor was not at all prominent and almost completely missable. 

     My lack of confidence had me in need of emotional and physical support so I called on my mom for help.  Her and I have made a many Jell-O jigglers together so I had faith she would get me through this. She had also experienced lots of molded jello salads at family reunions and holidays in her day which prepared her for the hodge podge of ingredients we were about to throw together.  



Cherry Cola Mold
1 package (8 oz) cream cheese, softened 1/4 mayo 1 package (3 oz) each of Cherry and Strawberry Jell-O 1 cup boiling water 1 (1 lb. 1 oz)can pitted cherries 1 (13 1/2 oz) can pineapple tidbits 7 oz. oc cola beverage 1 cup chopped nuts


This took very little time and effort to mix up but the downside is that you have to wait all day for it to set. If you were serving this at a party you need to prepare it way in advance. You should maybe also have a back up plan just incase it doesn't turn out.

When unmolding jello, you need to pull it away from the sides of the pan with a knife, submerge it into hot water all the way up the sides for 10 fast seconds, give it a wiggle and then flip it upside down on a plate. I found that giving it a good single shake helped to wiggle it loose. My heart was racing the whole time but we came out on top!



We actually enjoyed the flavor of this jello. It was very tropical and sweet, perfect for a summer picnic. The cream cheese gave it a smooth texture which made it pleasant to eat. We were very surprised to find this creation to be so yummy. I encourage you to try it for yourself and share with your friends and family. Just don't tell them what's in it!
