This weekends recipe is dedicated to a meat that holds a very special place in my heart, bacon!! Our relationship started when I was very young, eating bacon sandwiches on white bread with mayonnaise prepared by my dad every Saturday morning. Our romance grew as I got older and found out that I could put bacon, not only on my sandwiches, but in anything my heart desired! This weekend I decided to step up our relationship to the next level and introduce bacon to one of my dearest friends, Macaroni and cheese!
Bacon Mac 'N' Cheese:
6 strips good quality bacon
8 tablespoons butter
1/4 medium yellow onion
1 clove garlic
1/2 cup flour
3 cups 2% milk
12 ounces sharp cheddar cheese
4 ounces Gouda cheese
1/2 of a 16 oz box macaroni
salt and pepper to taste
- boil noodles until soft and tender, strain
- fry off bacon until crispy to keep it from getting soggy when added to macaroni
- drain off on paper towel and discard most of the grease
- melt butter in grease seasoned pan on medium high heat until foaming subsides
- cook onions until softened and almost translucent
- add garlic, cook until fragrant, 1-2 minutes
- stir in flour until thickened and tan
- slowly add milk 1/2 cup at a time, thickening before each addition
- once the roux is nice and creamy stir in the Gouda and 2/3 of the cheddar cheese, flavor with salt and pepper
- pour noodles into an oven safe dish
- remove cheese sauce from stove and pour over noodles
- add 1/2 of the crispy bacon and stir it all together
- Top with remaining cheddar cheese
- bake in a 375* 20-30 minutes, until cheese is bubbling and browning
Serve and enjoy!
I have to say that Bacon and Mac really hit it off! I think they have melted into a beautiful new friendship.
