Soft Pretzels
Baseball season has started and one of my favorite treats to get at the game is a soft pretzel. It is the complete comfort food package of melted butter, bread, and salt. They are the best warm and fresh out of the oven. What better way to guarantee freshness other than baking it myself?
This is a very simple dough that can easily be worked by hand. If you have a mixer with a dough hook attachment that is wonderful, too.
Yields: 6 knots or 3 large pretzels
Bake time: 10-15 minutes

Pretzel Dough
2 1/2 c. flour
1 t. salt
1 t. and 1/4 c. sugar
4 T. soften butter
2 1/4 t. instant yeast
2/3 to 3/4 lukewarm water
Hydrate yeast with water and let sit for 5 minutes. Pour into bowl and mix in flour, sugar, butter, leaving salt for last. Salt kills yeast so there should be as little contact as possible. mix in bowl until dough comes together then pour onto table. Continue working the dough with the palms of your hands until smooth and elastic. Do not over do this stage because it will leave you with a very tough pretzel in the end.
Place dough ball in a greased bowl and let rise in a warm spot for an hour or until doubled in size.
When I made pretzels in culinary school we dipped them in lye to give them that dark pretzely color. I did not believe this was a very safe procedure so I found a different solution. Baking soda and water do the same trick.
1 c. warm water
2 T. baking soda
While your dough is rising, boil the water and dissolve the baking soda.
After your dough has risen, divide into six pieces (for knots) or three (for large pretzels).
Once you have formed your pretzels, put them in a baking dish and soak them in the baking soda solution for 2 minutes. Preheat your oven to 425*
Remove your pretzels and place them on a baking sheet (optional: sprinkle with cinnamon sugar/ pretzel salt) and bake for 10-15 minutes of until completely golden brown. They should sound hollow when you tap on them with your fingernail.
There you have it! You are ready for game day and don't even have to leave the comfort of your own home! Enjoy!
