Brown Sugar Cinnamon
Coffee Cake
One of my favorite smells in the entire world is cinnamon fresh out of the oven. This morning I was in need of that heart warming smell and decided the solution was coffee cake! The recipe below is one that I put together myself through trial and error. I have taken three different recipes and jumbled them together to make this delicious cake.
Prepare in this order:
Yield: 6 mini loaf pans
Preheat oven to 350*
Streusel topping:
1/2 c. brown sugar
1/2 c. flour
1/2 c. oats
8 T. Butter (cold)
Mix all of these ingredients until it creates a crumbly meal. Chill in fridge for 30 mins or overnight.
Cake batter:
1 1/2 c. flour
Pinch of salt
1/2 c. sugar
2 t. baking powder
3/4 c. milk
1 egg
1 t. vanilla
1/2 stick of butter (melted)
Mix all ingredients together leaving the butter for last. Slowly pour meltd butter while mixing. Pour batter into desired greased pan.
Brown sugar swirl:
1/2 stick soft butter
1/4 c. brown sugar
1/2 t. flour
Dash of cinnamon
Mix all inredients into a paste. Drop spoon fulls of paste into batter and swirl with a knife of toothpick.
Top with streusel.
Bake for 20-30 minutes.
Once they are out of the oven and cooled, remove them from the pan and drizzled with icing made from powdered sugar and a little bit of milk.
Eat and enjoy!
