"Milks Favorite Cookie!"

I adore these cookies!  Give me a stack of five with a big mug of milk and I will dunk 'til my heart's content.  Sadly we were out of cookies at our house however, my baker brain took over and said, "Make your own!".  My hungry self thought that was a wonderful idea and got to work.

Cookie
 2 sticks of unsalted butter (melted and cooled)
3/4 cup granulated sugar
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips (melted and cooled, slightly)
1 egg

1 1/2 cups unbleached AP flour
3/4 cup cocoa powder
1 teaspoon salt
1/2 teaspoon baking soda

*Chill dough for 30 minutes in the fridge
 *Roll out dough to 1/4 inch thick and cut out cookies with round cutter.
*Bake at 325* for 20 minutes

Cream Filling
1 stick unsalted butter, softened
1 2/3 cups powdered sugar
1 teaspoon vanilla extract


These smell wonderful while they are baking.  I recommend snatching one fresh from the oven and letting the warm cookie melt in your mouth. Delicious! I could not control myself once the filling was made.  I assembled one cookie and it went straight in my mouth!  SO GOOD!  Don't just take my word for it, make some for yourself and I promise you won't be sorry.
