Plum Galette

 

 


 

 


 

Pie Dough  

  • 1 1/2 cups all-purpose flour 
  • 1 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 stick unsalted butter (cold)
  • 1/4 cup cold water

1. Using a pastry cutter, food processors, fork, or fingers, blend all dry ingredients together and break butter into tiny pieces. No larger than pea size. Should resemble corn meal/bisquick. 

2. Pour cold water in and gently bring it all together. When mixture starts to stick together, pour onto counter and fold and press it together just until a dough ball forms. 

3.Press into a disc, wrap in plastic wrap, and chill in the fridge for at least an hour.

4. You can double this batch and freeze the extra dough.

 

Plum Filling

  •  1/4 c sugar
  • 5 plums, sliced
  • 1/3 c sugar
  • 3 tablespoons almond flour
  • 3 tablespoons flour
  • 1/2 teaspoon salt

1. Roll out dough to be 1/4 inch thick circle

2. Mix 1/4 c sugar with sliced plums 

3. In a separate bowl, mix 1/3 c sugar, almond flour, flour, and salt together.

4. Spread the dry mixture in a thin layer on top of rolled out pie dough, leaving 1 inch border

5. Place plums in a spiral on top of almond flour mixture

6. Crimp the edges of the pie dough to secure plums and juices

7. Egg wash the dough and top with sugar sprinkles

8. Bake at 400* for 45-60 minutes until bubbly middle and golden brown crust
