Coconut Bars 



Cookie base

  • 1 1/2 cups all purpose flour
  • 3/4 cup dark brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup softened butter

  1. Beat softened butter and brown sugar until smooth 
  2. Mix in flour and salt until blended, mixture will be crumbly
  3. Press 3/4 of dough evenly into greased pan, set 1/4 of dough aside
  • Filling 
  • 10 mounds bars
  • 1 can sweetened condensed milk
  • 1/2 cup shredded coconut 
  • 1/4 cup chopped almonds (optional)

  1. Roughly break up Mounds bars and drop them evenly over raw dough in pan
  2. Sprinkle in shredded coconut
  3. Pour can of sweetened condensed milk over everything
  4. Top with remaining 1/4 cup of dough
  5. Bake at 350* for 12-15 minutes 

Topping

  • 6 oz semi sweet chocolate chips
  • Toasted coconut 

  1. Hot out of the oven, sprinkle chocolate chips on top
  2. Wait about 5 minutes for chips to melt then spread smooth 
  3. Sprinkle toasted coconut over top
  4. Chill for an hour or overnight
