Coconut Poke Cake



Happy Birthday to Peach!

    In celebration of the birth of Peach Betty, her blog and video have been highjacked by "Flour Power" with Sue and Sullivan!  To honor her, we are making a retro coconut poke cake!  Back in the day, everyone used pudding mix to make their cakes more silky and moist.  My Mom made this cake and I have put my own spin on it.  I don't have a written recipe, but this is pretty much how it goes:

1 yellow box cake mix
1 small package of Jello coconut instant pudding mix
1 stick of melted butter
3 eggs
1 cup of water
mix these all together and divide into 2 buttered and floured 10 inch cake pans
bake at 350 for about 25 minutes
cool in the pans for 5 minutes and then flip out on cooling racks

while the cakes cool, bring 1 cup of milk to a boil and add 3/4 cup of sweetened coconut
set this aside to cool

place one cake on the stand, top side down and poke holes all over it with a straw
spoon the milk and coconut mixture into the holes
top with Kool Whip
place the second cake on top, top side up, repeating the process
cover the entire cake with Kool Whip and sprinkle with coconut, mashing it to the sides
keep refrigerated


  Peach has always loved this cake and we thought it would be great to make one for her special day.  It is a cool and refreshing cake for a hot summer day!

You can create variations of this recipe with other flavors.   You can also make the pudding and spoon it into the holes!  Or, make Jello and pour it in!  The variety is only limited by your imagination!
