Green Jello Salad (Green Stuff)





Nutty Green Salad Dessert

This week's request was for a dessert I know very well. Amanda wanted to know what exactly went into this green, or pink, Jello salad her grandma used to bring to family gatherings. As soon as she started to describe what she remembered about it, I knew exactly what she was looking for...GREEN STUFF!

Just like Amandas grandma, many of my family members had their version of green stuff, only it was  usually pink! It was a dish that was guaranteed to be at our Tennessee family reunions every year. The color and flavor depended on what kind of Jello you mixed in. Strawberry or cherry for Pink Stuff, or lime or pistachio for Green Stuff. 

Trying to find the recipe in my cook book collection was surprisingly easy. This nutty green salad is featured right on the cover of the Real Estate One Gifts from the Kitchen, Nice and Easy Desserts Cookbook, from 1970. 




 It is almost impossible to mess up this dessert. Just be sure to stir the Jello into the pineapple chunks first and then after tossing in the remaining ingredients, finish with the cool whip. All that's left to do is pile it high into a serving dish, top it with a cherry and head off to your picnic.
Our family had a slight variation to the recipe.  They added cottage cheese for a bit of texture!
