Chicken Salad
To avoid going to the grocery store, I have been trying to make recipes that will feed my family for more than one meal. After raiding my pantry, I found two cans of chicken that were just begging to be turned into something yummy. I bypassed the cans of tuna and ignored the vintage spirits with their suggestion on tuna casserole. I needed something that would be fast and delicious.
Chicken salad was the first thing that came to mind. but I wanted to make it more exciting rather than just adding mayo. I dove into my pile of vintage recipe books for inspiration. Chicken salad seemed to be a staple dish throughout the years in every recipe book. I noticed they all had very similar ingredients with just a couple of variations adjusted to taste. Some would sweeten the chicken with apples and nuts, others would add curry powder and onion for a more exotic flavor. So as long as you have chicken and mayo your possibilities are endless.
Sullivan and I chose to add some of our favorite foods to our salad...gouda cheese, pecans, apples and craisins! As I diced everything up it was had to keep up with Sullivan shoving it all in his mouth.
Here is our version of a Waldorf Chicken Salad:
Morgan & Sullivan's Chicken Salad
2 cans of diced chicken, drained
1 diced sweet apple
1/2 c diced gouda cheese
1/4 c chopped pecans
1/4 c dried cranberries
4 Tablespoons mayo
1/8 teaspoon onion powder
1/8 teaspoon dried thyme
salt & pepper to taste
Put it all in a bowl and mix, mix, mix!!
I loved this chicken salad recipe. I ate it on some toast one day and tortilla chips the next. What would you toss in?
