Apple Crumble Pizza
Sometimes your son takes a bite out of all the apples in the fruit bowl and you have to figure out how to use them before they rot. That was my mission for this week, to create an apple something or other that was unique and delicious.
I wanted something flaky and cinnamon sweet but did not have enough apples to make an entire pie. Sullivan and I had just recently made some apricot crescent cookies that I thought would be a good base for our apple concoction. The dough was stable enough to stand alone on the pan and hold a heavy filling without falling apart. The trick to this dough is cream cheese. The original recipe used sour cream but I didn't have any in my fridge so cream cheese was the next best thing. I think it is also a good substitute for butter in many cases.
Sullivan's Apple Pizza
Bake 350* 30-35 min Makes 2 8 inch
DOUGH
1 c flour
1/4 teaspoon salt
1/2 c cold butter
4 oz cream cheese
1 egg
FILLING
4 firm apples
2 heaping Tablespoons brown sugar
pinch of salt
1/4 teaspoon cinnamon
STREUSEL
1/4 c flour
1/4 c oats
1/8 teaspoon salt
1/8 teaspoon cinnamon
2 oz cold cream cheese
Sullivan and I cut the cold butter and cream cheese into the flour to create a beautifully marbled dough. We split it into two disks and let them chill while we made the apple topping. I peeled the apples and salvaged as much of the flesh as I could. We diced them and tossed them around with brown sugar and cinnamon, then softened them up on the stove with some butter. Once they were almost ready to be mashed up for apple sauce, I removed them from the heat and put them in the fridge to chill.
To save on the use of butter, we crumbled up cold cream cheese with the streusel oat mixture to create the best streusel topping I have ever made. The cream cheese holds up really well when baking and creates the large chewy crumbs that are everyones' favorite part.
Now that all the parts of our dessert were ready, all we had to do was assemble it! We rolled out our two dough discs and sprinkled the cinnamon apples and crumble all over it. The pizza baked for 30 minutes. We pulled it out just as the edges started to become golden brown.
