Southern Peach Cobbler


This weekend's recipe comes from generations of country women from Western Tennessee. My Mom taught me what she learned from her Mom and, her Mom passed on to her what she learned from my great Grandma.  When I asked for the recipe all my mom could do was laugh.  There is no such thing!  She just throws in a little bit of this and a little bit of that.  Being a professional Pastry Chef, this did not settle well with me.  There needs to be measurements and detailed instructions.  How are you suppose to know what to do? However,  there is no doubt in my mind that she does.  It must be in her southern blood.


When we got to work, I watched her carefully and continuously asked, "How much was that?" as she threw things into a bowl.  After taking meticulous notes, here is what we came up with,

Peach Cobbler:

5 ripe peaches

2 teaspoons cinnamon

1/2 cup brown sugar

1 stick melted butter

1 cup flour

1 teaspoon baking powder

1 teaspoon baking soda

1/4 teaspoon salt

1 cup sugar

1 cup milk

Bake at 350* until golden brown

9"X13" pan

 Start out with a cute mom!  (Just kidding) This is optional but totally makes it better!
Peel, pit and, slice your peaches.  We used a mix of white and yellow.

I found this next step to be very interesting but made a lot of sense.  Melt the butter in the 9"X13" pan inside the oven! 




   This greases your pan and makes an irresistibly chewy crust on the edges.                                                  

Stir up the peaches with cinnamon and brown sugar and then set them aside so they can create a beautifully sweet friendship.



Whisk all the dry ingredients together and stir in the milk until all lumps have disappeared. Pour mixture evenly over the melted butter but do not combine.

Delicately drop the sugared peaches all over the top


Place the pan in the oven and wait for the batter to turn golden brown.


This cobbler is at its best fresh out of the oven, topped with vanilla bean ice cream!

My mouth is honestly watering as I type this blog!  Thank goodness for leftovers! I hope you enjoy this as much as my family has for so many years.  Maybe you can make it a tradition of your own someday.
