St Patty's Day Cookies



Happy St. Patrick's Day!!!

Peach Betty is getting ready to celebrate St. Patty's day and in honor of the Irish holiday we baked up some shamrock sugar cookies. 


Sugar cookies are super easy to make but whether the cookies look and taste good relies entirely on your recipe.

Here is our favorite:
1 1/2 sticks of butter
1 c. sugar
2 eggs
1 t. vanilla
2 1/2 c. flour
1 t. baking powder
1 t. salt
Chill for for 30 minutes or overnight.
Roll out to 1/4 in. thick and cut out shapes. 
Bake at 400* for 10 min. 
Yields 2 dozen cookies.


Perfect little shamrocks!



After they bake and cool, you are ready to decorate!!

Royal Icing:

4 c. confectioners’ sugar
  4 T. milk
3 T. light corn syrup
1 t. vanilla 

While decorating, we used what is called the flooding technique.  With a piping bag, outline the cookie to create a wall of icing, then flood the entire cookie.  This makes for a clean shape.
