 Peach Betty



Preheat oven to 375*

Bake 40-45 minutes 

Butter one medium casserole dish

Peach Filling

  • 2 cups peaches (fresh or frozen) NOT CANNED
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger 
  • 1-2 Tablespoons sugar

  1. In a medium saucepan, stir all ingredients together and cook until bubbling and peaches soften
  2. Let cool in fridge
  3. When cold, strain peaches to remove excess liquid
  4. Pour peaches into buttered medium casserole dish 


Crumb Topping

  • 2/3 cup all purpose flour 
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ginger 
  • 1/4 teaspoon baking soda 
  • 2/3 cup quick oats
  • 1/4 cup melted butter
  • 1/3 cup brown sugar 
  • 1/2 teaspoon vanilla


  1. In a small saucepan, melt butter, stir in brown sugar and vanilla
  2. In a separate bowl, mix together flour, oats, sugar, cinnamon, ginger, salt and baking soda
  3. Add butter and sugar mixture into dry ingredients and mix until crumbly 
  4. Sprinkle crumb over peaches 
  5. Dot with butter 
  6. Bake until toasted brown and bubbling
