Peach Betty
Here is the recipe that inspired it all. Enjoy this video from when I was just starting out on my YouTube journey. It all began with a children’s cookbook and an adorable illustration.
Preheat oven to 375*
Bake 40-45 minutes
Butter one medium casserole dish
Peach Filling
- 2 cups peaches (fresh or frozen) NOT CANNED
- 1/4 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1-2 Tablespoons sugar
- In a medium saucepan, stir all ingredients together and cook until bubbling and peaches soften
- Let cool in fridge
- When cold, strain peaches to remove excess liquid
- Pour peaches into buttered medium casserole dish
Crumb Topping
- 2/3 cup all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon ginger
- 1/4 teaspoon baking soda
- 2/3 cup quick oats
- 1/4 cup melted butter
- 1/3 cup brown sugar
- 1/2 teaspoon vanilla
- In a small saucepan, melt butter, stir in brown sugar and vanilla
- In a separate bowl, mix together flour, oats, sugar, cinnamon, ginger, salt and baking soda
- Add butter and sugar mixture into dry ingredients and mix until crumbly
- Sprinkle crumb over peaches
- Dot with butter
- Bake until toasted brown and bubbling
